Goat Cheese-Stuff Bacon-Wrapped Dates

Ingredients:
1 package of dates (usually 20 or so per package)
4 oz. plain goat cheese (you might not use all of it)
7 pieces of bacon

Directions:
Preheat oven to 425°
Slice all of the dates partially in half lengthwise (if not already). Do not cut all the way through. You want the dates to be connected on one side still so it opens like a book. If your dates are not pitted, remove the pits.
Stuff each date with goat cheese, just enough to fill it but not so it's overflowing when the date is closed again.
Cut each piece of bacon into thirds then wrap each date with a piece of the cut bacon. The bacon should overlap just slightly - too much overlap will result in uncooked bacon. Secure the bacon with a toothpick and place on a foil or parchment-lined baking sheet.
Cook at 425° for about 20 minutes until the bacon is cooked. You may want to turn them once to avoid burning.
Remove from the oven and allow to stand for 10 minutes before serving. Can be served warm or room temperature.
Save leftovers in the fridge for up to 3 days. Reheat at 350° until warmed through.
